I have been canning produce since I was a kid, especially when Mom grew an abundance of produce (sound familiar). This year was no exception. Starting with tomatoes and peppers, I began canning and it kept me busy throughout the summer and well into the fall. But then, I decided to branch out into baking, another of my pastimes.



IT STARTED WITH THE FAIRS



FRESH & CANNED GOODS


I have been working on my cookbook for years, copying down recipes, perfecting them and adding them to binders. I now have six books in total, from canning and preserving, to beverages, to main courses and deserts.


Then I decided to enter some products in county fairs, Henry, Patrick, and Franklin and the Tobacco Road Honey Show. That in itself turns up the dial on perfecting a recipe.



TOMATOES



I sold quite a few fresh tomatoes, but planted enough to can, including quarts of tomatoes, tomato sauce, tomato paste, tomato soup, spaghetti sauce, tomato juice and my favorite, SALSA.

PEPPERS



There is nothing better on a sub sandwich or pizza than a pickled pepper. For more heat, pickled jalapeno peppers. However, the biggest use of my peppers was for my SALSA.
Tobasco peppers (30,000-50,000 SHU) are reserved for pepper flakes and enhanced seasoning.

APPLESAUCE & BUTTER



In 2022, we harvested 40 pounds of apples from the trees, that until that time, had produced nothing. Spring of 2023 showed very promising blossoms, however, the trees were not strong enough to support a crop. I got only 30 apples. I then purchased Macintosh apples to make my apple sauce and apple butter. Hopefully 2024 will show a better harvest.

PICKLES & RELISH



I have been making dill pickles for years - yes, it is the only variety I love. I also make dill pickle relish - perfect on hot dogs and in tuna salad.

it has been a labor of love to grow my herbs from seed, learning more and more about their value, then preserving/drying them for long-term storage (typically 2 years). Opening a bottle or bag, you smell the freshness that is unattainable when purchasing the same product from the store.

Canning produce from my garden ensures I know what I am eating and I am able to offer naturally produced products to share with my customers, friends and family. Going from garden to kitchen is a blessing - fresh and naturally grown.



Over the years, following family recipes and food safety guidelines from Ball and Virginia Tech, I have not had any issues with spoilage, when using the products within a 1-year recommended timeframe.

THE BAKERY IS LAUNCHED




I began adding baked goods in 2023, as an outgrowth of all the items I had grown as well as the availability of eggs and honey, essential and required ingredients.



MUFFINS & CAKES



I love baking cakes and muffins. They are a staple for my breakfast snack and great for driving in the car. This year i made 200 muffins: Banana Bread, Chocolate Chip Banana Bread, Zucchini, Carrot, Lemon Poppyseed (earned blue ribbon at the county fair), Blueberry, Apple-Cranberry, Applesauce Cinnamon, and Chocolate.


In addition, I made 15-egg, Angel Food Cakes and Chocolate Angel Cake, as well as mini Lemon Pound Cakes

COOKIES & CANDY



I got back into making cookies and candies to enter into fairs. it took me 5 batches of chocolate chip cookies to get a consistency and flavor I liked. It paid off, as I earned a blue ribbon at the Patrick County fair for my efforts.


At the Tobacco Road Honey Show, entered honey caramel. Through persistence and several batches, I earned a blue ribbon and was nominated for Best of Show.
